Here is what you'll need! Homemade Al Pastor Serves 10-12 INGREDIENTS 5 pounds boneless pork shoulder 3 tablespoons achiote paste 2 tablespoons guajillo chili powder 1 tablespoon garlic powder 1 tablespoon oregano 1 tablespoon cumin 1 tablespoon salt 1 tablespoon pepper ¾ cup white vinegar 1 cup pineapple juice 1 pineapple, skinned and sliced into 1-inch rounds 1 thick wooden skewer, trimmed to the height of your oven 10-12 small corn tortillas 1 white onion, chopped finely 1 cup cilantro, chopped finely 1 cup salsa of your choice PREPARATION Preheat oven to 350°F/180°C. Slice the pork shoulder into about 1-cm slices, then transfer to a large dish or bowl. In a bowl, combine the achiote powder, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice, mashing and stirring until smooth with no lumps. Pour the marinade over the pork, then toss the pork slices to make sure that they are all coated on all sides. Wrap the dish/bowl in cling film then marinate the pork for at least 2 hours, up to 3-5 days in the refrigerator. On a baking sheet lined with parchment paper or foil, place down a slice or two of the pineapple. Take a wooden skewer and push it directly in the middle of the pineapple. Remove the pork from the fridge and push the slices through the skewer, layering one after the other until there is a 1-inch gap at the top. Push another pineapple slice on top. Bake for about an hour and a half, until slightly charred on the outside and deep red. Rest the meat for about 10 minutes, then carve off thin slices of the pork. Slice off thin pieces of the roasted pineapples as well. To assemble and serve, place some pork on the tortillas, followed by a few pieces of pineapple, a sprinkle of onions, a pinch of cilantro, then a small spoonful of the salsa. Enjoy! Makes 14 tacos. 14 taco shells For the rajma topping 2 cups soaked and cooked red rajma (kidney beans), refer handy tip 1 tbsp oil ½ cup finely chopped onions ½ tsp garlic (lehsun) paste 1 cup fresh tomato pulp 2 tbsp tomato ketchup ½ tsp chilli powder 1 tsp cumin seeds (jeera) powder Salt to taste For the uncooked salsa ¾ cup finely chopped tomatoes ¼ cup finely chopped spring onion whites and greens ¼ tsp finely chopped green chillies ½ tsp dry red chilli flakes ½ tsp dried oregano 1½ tsp finely chopped coriander (dhania) ½ tsp sugar Salt to taste Other ingredients 7 tsp tomato ketchup 3½ tsp chilli sauce 1 cup shredded iceberg lettuce 28 tsp grated processed cheese For the rajma topping 1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 to 2 minutes. 2. Add the tomato pulp, tomato ketchup, chilli powder, cumin seeds powder and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. 3. Add the rajma, mix well, mash it lightly using a potato masher and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Keep aside. For the uncooked salsa Combine all the ingredients in a deep bowl, mix well and mash it lightly using the back of a spoon for 2 to 3 minutes so that the flavours blend well. Keep aside. How to proceed 1. Fill a taco shell with 1 tbsp of rajma topping, ½ tbsp of uncooked salsa and spread ½ tsp of tomato ketchup and ¼ tsp of chilli sauce evenly over it. 2. Arrange a few shredded lettuce leaves and 2 tsp of grated cheese evenly over it. 3. Repeat steps 1 and 2 to make 13 more tacos. Serve immediately. Handy tip: ¾ cup of raw rajma when soaked for 8 hours, drained and pressure cooked with enough water for 6 whistles gives 2 cups of cooked rajma.

OK, this week’s Taco Tuesday takes me back to my time as a student living in Mexico City, where this mixture of tatume squash and roasted poblano in a tomato-crema sauce quickly became my go-to order at the taqueíra down the street. Nostalgia aside, it’s still one of my favorite tacos of all time. It all starts with the flavoring base, a simply satisfying tomato-onion-garlic mixture that serves as the foundation for the roasted chiles, corn and herbs. A big dollop of Mexican crema lends the mixture an irresistible richness. (If you stir it in al the very last moment, Greek yogurt can stand in for the crema.) These are downright perfect as a vegetable option for dinner, but if your crowd is more carnivorous, these will be be super good with the addition of small pieces of pork tenderloin (simmered along with the with the squash), shredded rotisserie chicken or, of course, some crispy fried bacon. The entire rib in my taco was the highlight, so tender and flavorful. Price - 20 MXN ($1.08) per taco El Pescadito de Sonora - Originating from Hermosillo in Sonora, El Pescadito serves Mexican seafood tacos, especially shrimp or marlin tacos. Their tacototo is a taco that will change your life. This was as good as food gets for me. Price - 35 MXN ($1.89) per taco Tacos Charly - When it comes to Mexican street food, suadero is one of the greatest, a massive pan of slow braising beef in its juices. When you order your tacos, they slice up the meat, dip your tortilla in the fat, and you eat it with onions, cilantro, and salsa - pure meat heaven. Price - 13 MXN ($0.70) per taco Taqueria Los Güeros - Tacos de tripa, intestines, are very popular in Mexico City as well. They may not be the most pretty tacos, but they are immensely flavorful and have all sorts of different textures going on in your mouth. Price - 13 MXN ($0.70) per taco Tacos Los Juanes - This is a great Mexican street food restaurant in Mexico City that serves all sorts of different tacos. MEXICAN FOOD, MEXICAN BURRITOS, TACOS, NACHOS, MEXICAN STREET FOOD, CAMDEN MARKET LONDON, A burrito consisting of a large wheat flour tortilla with a filling, wrapped into a closed-ended cylinder, in contrast to a taco, where the tortilla is simply folded around the filling. The flour tortilla is sometimes lightly grilled or steamed to soften it, make it more pliable and allow it to adhere to itself when wrapped. In Mexico, meat and refried beans are sometimes the only fillings. In the United States, burrito fillings may include a combination of ingredients such as Mexican-style rice or plain rice, beans or refried beans, lettuce, salsa, meat, guacamole, cheese, sour cream and various vegetables. Burrito sizes vary. Mexico Burritos are a traditional food of Ciudad Juárez, a city in the northern Mexican state of Chihuahua bordering El Paso, Texas, where people buy them at restaurants and roadside stands. Northern Mexican border towns like Villa Ahumada have an established reputation for serving burritos. If you want to learn how to cook real tacos just like there made in Mexico I have the recipe. The quintessential part of any Mexican taco lies with the simple corn tortilla. My recipe was taught to me in the Mexican states of Sonora and Durango. Though this recipe is based on a simple street taco that you can find anywhere in Mexico. If you want to learn how to make a real Mexican taco this is the recipe. The preferred cut of Beef is Mexican Fajita or what we call flake steak. The meat is 1st marinated and must be grilled over live charcoal. To create a true mexicana taco the meat must be cooked well done. Remove your fajita beef from after it is fully cooked. Take your beef and cut it into thin slices. On a plate layout two corn tortillas add the chopped grilled beef to the tortillas. Add Mexican Pico de Gallo, Manchego Cheese and Mexican Guacamole. Traveling through the Sierra Modrays would not be advised at the current time they sure do make some real good tacos.

TACO Boats MEXICAN style stuffed SUBS - Simple ingredients like dinner rolls and ground beef, with the help of some Mexican condiments make some super fun Taco boats! Mid week dinners can be depressing to plan but this recipe will bring in the sunshine and the party! What I love about these are that they are portable and you can even take leftovers to school or work for a nice quick lunch. Big Green Egg Pork Carnitas Recipe with Mexican Style Pulled Pork | Pork Carnitas Tacos For more barbecue and grilling recipes visit: http://howtobbqright.com/ I start this Pork Carnitas Recipe with Mexican Style Pulled Pork recipe with a 7-8lb boston butt. I cut slits diagonally across the fat cap of the Mexican Style Pulled Pork going in opposite directions. I want to develop some flavor inside the Mexican Style Pulled Pork so I marinade the pork butt overnight. - 32oz Orange Juice - 5 Chipotle Peppers in Adobo Sauce (about ½ small can) - 1 Orange quartered - 2 Limes halved - 1 Onion quartered Place the Pork Butt on a large platter and season all sides with my Salt, Pepper, Garlic : All Purpose rub. For a simple ratio use 1 part salt, ½ part granulated garlic, and ¼ part ground black pepper. Chop the Chipotle Peppers and spread over the top of the Mexican Style Pulled Pork. The pork butt goes into the bag and then orange juice and onions. Squeeze the lime and lemon quarters into the bag as well. The Mexican Style Pulled Pork needs at least 12 hours in the marinade but I’ve went as long as 24. The next day remove the pork butt from the marinade and discard the liquid. The first layer of seasoning is more of the All Purpose rub I mentioned earlier. Then add Ground Cumin, Ground Chipotle Powder, Ancho Chili Powder, and Cinnamon. Just eyeball each, one-by-one, and season all sides of the pork. Lastly, just for a little extra color, sprinkle on The BBQ Rub. For this cook I used my Big Green Egg ceramic grill set up for indirect cooking. You want to maintain a steady temperature of 275-300 degrees. For wood smoke I add a few chunks of hickory wood to the hot lump coal. As soon as the grill hit 275 it’s time to start cooking. It’s all about the color of the bark on the Mexican Style Pulled Pork. Open the lid at 4 hours and you’ll see that it’s starting to look a little crusty and maybe even turning a bit dark in places. This is perfect. Now it’s time to braise the pork. Take the pork butt inside and place in a large aluminum pan. For the braising liquid you’ll need: - 32oz Tomato Juice - 16oz Orange Juice - 1 Onion quartered - 5-6 cloves of garlic smashed - 2-3 Bay Leaves - 2 Guajillo Peppers (dried) - 2 Limes quartered Pour the juices into the pan around the pork about 2 inches. Make sure you’re using a pan big enough to hold the liquid. Add the onions, garlic, bay leves, peppers, and limes. Cover the pan with aluminum foil and place the Mexican Style Pulled Pork back on the grill still running at 275 degrees. I also insert a meat probe at this point, so I can monitor the internal temperature without having to open the lid. This will help reduce the cook time because the grill doesn’t have to recover from heat fluctuations. Wired meat thermometers are fairly inexpensive and worth the money. I think I paid $25 for the Thermoworks DOT and it’s simple to use. Check out the DOT here: http://howtobbqright.com/blog/?page_id=2533 It should take about 3-4 hours for the pork butt to fully cook from this point. The target finishing temperature is right at 200 degrees. I usually set the alarm for 198 and check the meat with a hand held thermometer to feel for tenderness. Bring the pan inside and let it rest for 10-15 minutes. This is the perfect time to work on the garnish for the Pork Carnitas tacos. Here’s my favorite accompaninments: - Fresh Cilantro - Thin Slice Radish - Sliced Avocado - Lime Wedges Now that the Mexican style pulled pork has rested for a few minutes, remove it from the braising liquid and place on a platter. You can reserve the liquid for later use if you plan on reheating the pulled pork. Strain the liquid and let cool. Skim the fat off the top and refrigerate. To make the Pork Carnitas tacos, lay two tortillas on a plate, place a mound of Mexican Style Pulled Pork down the center. Garnish with a couple slices of avocado and radish. Next a little cilantro or in my case a lot! Then the best part: Chipotle Sour Cream Sauce…here’s the recipe: - 8oz Sour Cream - 4oz Mayo - 4-5 chipotle peppers in adobo sauce (chopped) - ½ Fresh Lime (juice only) - ¼ teaspoon ground cumin - salt and black pepper to taste It’s best to mix this sauce up ahead of time and let it rest in the refrigerator for an hour. Squeeze a fresh lime wedge over the Pork Carnitas taco and a few shakes of your favorite Mexican hot sauce. Prepare to have your taste buds blown because this is one serious Mexican style pulled pork taco! You'll need: 12 slices of bacon 2 eggs 2 oz cheese chives as garnish And some tools: 2 glasses 3 skewers Here's how: Lay the bacon slices on parchment paper to form a weaved mat by first laying six in one direction and then laying six on top of crosswise alternating above and below the other slices. Bake the bacon mat for 12 minutes at 355°F. When it's done, use a bowl to help you cut out a circle. Use the two glasses to make a stand and lay the skewers on top of them. You may have to tie the skewered together. Hang the circle of bacon over the skewers and put the whole thing in the microwave. Cook for two minutes at 550W. This will give the bacon its taco shape and should hold when it cools. Prepare the scrambled eggs by beating them in a bowl and adding the cheese. Fry the mix in a pan. When it's done, use it to fill the bacon taco and garnish with some chopped chives.

Learn how to make authentic Mexican rice just like you get in a Mexican restaurant. Light and fluffy and slightly smoky, this is great as a side to tacos or enchiladas or use as an ingredient in homemade burritos. You'll never buy Spanish rice in a pouch or box again! What you'll need: 1 cup long grain white rice 1/8 small onion 1 clove garlic 1 Tbsp tomato paste 1 3/4 cups water, divided 1 tsp Knorr caldo de pollo 1/2 tsp salt 3 Tbsp corn oil In a blender or food processor, puree tomato paste, onion and garlic with 1/4 cup water. In a medium heavy bottomed saucepan, heat corn oil over medium-high heat. When it's hot, add rice. Cook, stirring constantly, until golden brown and smells toasty. Add tomato paste puree to rice and cook, stirring constantly 1 minute. Add in remaining 1 1/2 cups water, caldo de pollo and salt. Bring to a boil. Once boiling, cover, turn heat down to lowest possible setting and simmer 20 minutes. Do not lift lid! When 20 minutes is up, turn heat off, lift lid to release excess steam and heat and recover. Let rest 10 more minutes. When 10 minutes is up, fluff rice with a fork and serve. Makes about 3 cups of authentic Mexican rice. Served 4-6. Enjoy! FAST Chicken Tacos Lunch or chicken burritos, Best, Mexican recipes. Authentic Easy Chicken Chimichangas or burritos filling, Pollo Tacos made from leftover chicken IN LESS THEN 5 MINUTES. Chicken Tacos: Ingredients: 3 cups cooked shredded chicken 1 8oz can of Mild salsa 1 ½ cup of chicken broth ¼ cup fresh chopped cilantro 1 tsp Guajillo chili powder ( Or Chili Powder Optional) Salt to taste ( Salt is the key ingredient that's why it's salt to taste.) Instructions: 1. Place chicken and all the ingredients in a plastic container And marinade over night. 2. Place 1 Tbs of lard in a large skillet and simmer for about 45 mins. Or until the broth is cooked down. You can use the filling in soft tortillas Or crispy ones. You can also serve it on a plate or over Mexican rice with Refried beans and a small tossed salad. My favorite and most authentic is fill a corn tortilla with the chicken filling and fry them in a skillet. Roll it in a Flour Tortilla and Fry it for a delicious chimichanga and top it off with warm salsa and Mexican crema.
