The Ketogenic Diet & Dairy (Milk, Yogurt & Cheese)
Take Dr. Berg's Advanced Evaluation Quiz: http://bit.ly/EvalQuiz Your report will then be sent via email analyzing 104 potential symptoms, giving you a much deeper insight into the cause-effect relationship of your body issues. It's free and very enlightening. Dr. Berg talks about keto and dairy. The ketogenic diet requires you keep your carb low and especially sugars down to zero. Yogurts are out - because they contains lots of sugar, even the plain has 10 grams of sugar. Milk is pretty high - 12 grams sugar, but cheese, certain cheeses are zero sugars, but in general cheese is okay because it has very low sugar except for processed cheese, which is crazy high - 19 grams. Half and half is fairly low and whole cream is even better. Dr. Eric Berg DC Bio: Dr. Berg, 51 years of age is a chiropractor who specializes in weight loss through nutritional and natural methods. To support our channel and level up your health, check out: Our Fast Weight Loss Course: http://thehealthnerds.com/the-science-of-fast-weight-loss-course Our Better Health Basics Course: http://thehealthnerds.com/food-health-happiness Like us on Facebook: https://www.facebook.com/thehealthnerds/ So what are dairy products? Dairy products are food produced from the milk of mammals Butter, cheese, yogurt, sour cream, ice cream, milk, and whey protein are the most common examples of dairy products. EGGS ARE NOT DAIRY Eggs come from chickens and are a bird– therefore are not dairy. Now let’s look at 6 facts and studies about dairy for your health. Fact #1. 65-75% of People in the World Are Lactose Intolerant. https://en.wikipedia.org/wiki/Lactose_intolerance We’ve only been consuming diary for around 7,500 years starting in Northern Europe. Since modern humans have been around for roughly 200,000 years, we can see that dairy consumption is a relatively new thing to our species. This is why certain parts of Africa and East Asia are up to 95% lactose intolerant. http://www.sciencedirect.com/science/article/pii/S0002822300001620 Some of you may develop severe acne while others may just feel a little gassey after consuming dairy. Fact #2. There’s Lots of Nutrition in Dairy Products A single cup of milk contains 30% of your RDA in Calcium 24% of your RDA in Vitamin D 26% of you RDA in Riboflavin And has plenty of potassium, protein, vitamin B12, and various other nutrients your body needs. http://nutritiondata.self.com/facts/dairy-and-egg-products/69/2 There’s no denying that dairy provides a unique source of nutrients important to our body. Fact #3. Dairy is Associated with Acne Dairy increases the production mTORC1. This increases the bodies sebum production and sizes of sebaceous glands which increases your risk of acne. https://nutritionandmetabolism.biomedcentral.com/articles/10.1186/1743-7075-9-74 http://www.karger.com/Article/FullText/325580 https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3141390/ Fact #4. Not All Dairy Seems to Be Equal Fermented dairy products like yogurt and keifer contain probiotics which are excellent for your gut microbiome. Also, the quality of the cow’s life and what it’s fed effects the nutrition of the dairy product produced. Pasture raised grass fed cows have more Omega 3s and have up to 500% more CLA in their products. http://journals.plos.org/plosone/article?id=10.1371/journal.pone.0082429 http://www.csuchico.edu/grassfedbeef/research/health-benefits.shtml Not shockingly happy cows leading happy lives produce better dairy products. Fact #5. There’s A Lot of Sugar Content in Dairy Products Dairy contains a naturally occurring sugar called lactose that is in EVERY dairy product you consume. Fact #6. Dairy’s increases IGF-1 IGF-1 (or Insulin-like Growth Factor), is statistically increased from the consumption of dairy. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC2715202/ IGF-1 production increases your risk of acne and developing cancer. https://www.ncbi.nlm.nih.gov/pubmed/15562834 That being said, not all IGF-1 is bad. For instance, it has clear benefits to those of you trying to build muscle and gain strength. http://www.ncbi.nlm.nih.gov/pmc/articles/PMC2439518/ Why are there lots of recent studies out there praising dairy? Dalla dolla bill yall The diary industry alone spent 6.4 million dollars lobbying last year. Food for thought. Is Dairy Bad for You? It depends on the person. If you’re lactose intolerant, suffer with acne, or have any reason you think your body doesn’t process dairy perfectly - I would avoid it. However, it if you really enjoy it as a source of nutrition in your diet, and don’t suffer from the side effects. It’s ok to have. Which leads to the next question… Do you need dairy in your diet? Absolutely not. While diary does have lots of important nutrition like calcium, protein, and Vitamin B12, you can easily get those from other sources. Leafy greens, lean meats, and whole foods have all those nutrients WITHOUT all the sugar or hormone increases dairy. I personally don’t consume dairy for this reason. Does Dairy Help You Lose Weight? No. Weight loss is about having two things working correctly. Eating the Right Amount of Calories AND Having Properly Functioning Hormones. Dairy provides no advantage to losing weight and if you have an intolerance could impede some weight loss progress. What are the best kinds of dairy to consume? If you’re going to get your dairy on, Low-fat unflavored greek yogurt, keifer, and grass fed whey protein are the best. If you’re going to drink milk, make sure it’s organic. What kind of dairy should you never consume? Anything non-organic I’d avoid. Because dairy is already shown to raise IGF-1, avoiding any extra chemicals pumped into cows is a good idea.

Is Dairy Bad For You?- Thomas DeLauer
Is Dairy Bad For You? This is an in-depth look at the history of the dairy industry, the changes in practices over the last 20 years, and how it may be affecting your digestion, protein absorption and overall tolerance for lactose. Find out how hormones, antibiotics and mass production on dairy farms may potentially be causing adverse health issues. For more information on how simple things like dairy can affect you, go to http://www.thomasdelauer.com Dairy - A History 1. Between 1991 and 2004, the number of U.S. dairies decreased by half, and those with an excess of 100 cows increased by 94 percent. Big business tends to do anything to increase profits, which was led to changes that impact both our health and our sense of what is morally acceptable. (2) 2. Between 1950 and 2000, the number of dairy cows decreased by half, however the average milk yield more than tripled. (2) What this means for dairy: 1. Antibiotics: a. dairy cows live in some tough conditions and consume a diet that is high in protein and low in fiber, opposite of their natural diet of grass, which is high in fiber and low in nutritional density. They are fed this way to increase production, however it makes cows sick. (2) b. To keep cows healthy enough to produce milk, they are fed antibiotics. These antibiotics are passed on to us when we consume dairy products. This could lead to antibiotic resistance, and it is not fully understood what health problems this could pose. (2) 2. Hormones: a. milk contains natural hormones and growth factors - think about it - milk is produced in mammals to create the nutrition and resources for a small mammal to grow to be large. These hormones are meant to bring an 85 lb calf to a full grown 1,500 lbs (4). In addition to these naturally occurring hormones, synthetic growth hormones are frequently used to increase the production of milk. These hormones are readily available in the dairy we drink and may affect our normal hormonal function. (3) i. One hormone added to cow’s milk, insulin-like growth factor (IGF-1), has been implicated in increased breast and prostate cancer risk. In a study of nearly 22,000 participants for 28 years published by the Journal of Nutrition in 2013, it was found that those who consumed greater than 2.5 servings of dairy products daily had an increased risk of prostate cancer compared to those who consumed less than one half of a serving per day. (7) Aren’t there other nutrients that you need from milk? Every nutrient that you can obtain from milk, such as calcium, potassium, protein and fats can all be obtained from whole plant foods, such as vegetables, legumes, nuts and fruits. It is important to reduce the causes of chronic inflammation in our diets, and the hormones in milk, whether organic, raw milk or regular milk with even more hormones added in, can lead to inflammation. Cut dairy out of your diet for 30 days and see how you feel. It you find better digestion, increased energy and improved health, you are likely one of the majority who have an inflammatory response to dairy. If you do decide to continue eating dairy, do so in small quantities and be sure to consume organic, raw dairy. Resources: 1. Can I Freeze Dairy Products?
Some dairy products freeze well and others will curdle and separate. ** For more meal planning tips, pick up a copy of my e-book, "Mindful Meal Planning: Eat Healthy While Saving Time, Money & Stress" for only $6!** http://yourstrongtower.com/mindful-meal-planning-ebook Here's the rundown of which ones make good freezer candidates: • DO NOT freeze half-and-half, sour cream, cottage cheese, and buttermilk. They have a tendency to separate, become watery, and sometimes curdle. • Milk – 1 month. Make sure you take 1 cup per gallon of milk out of the container since it will expand when frozen. Milk should be consumed in a week once thawed. • Cheese – Up to 6 months. Freezing can change the texture of some cheeses, making them crumbly once thawed, and the firmer varieties (cheddar, Gouda, and Swiss) seem to hold up best. As I like to say, “The firmer the cheese, the better it will freeze!” • Butter – up to 12 months. I frequently stock up on sticks of butter when it goes on sale in November and December during the holiday baking season. Spreadable butters also freeze very well, too. I pop them directly in the freezer, no need for a freezer bag or container!

Non Dairy Whipping Cream Tutorial | Kitchen Time with Neha
Non Dairy Whipping Cream is a great alternative to use when you don't find whipping cream easily, especially in India. And it has become my go to cream for frosting cakes as it so stable in this hot weather and very easy and efficient to use. The non dairy cream I have used here is 'Delight' but we do get other brand names like 'Tropolite' which I have used and loved as well. I got this cream from Crawford Market at Mumbai but you can find it in any baking supple store as it is quite readily available where I live. If you have any questions, feel free to leave them in the comment section and I will reply as soon as possible. Cheese making M-C Dairy Plant Tour: Cheese, Sour Cream, Kefir, & dairy products
Tour the M-C Dairy production factory and see how cheese and other dairy products are made in Etobicoke with Borys Wrzesnewskyj, MP, Toronto, Canada, 31 March 2016 (Борис Вжесневський, Депутат округу "Etobicoke Centre", Президент "M-C Dairy", Торонто, Канада, 31 березня 2016). - 0:10 Pasteurization (Пастеризація) of milk - 0:26 Tanks of various sizes for making Huslanka - 0:37 Whey is agitated by hand. Cheese is cut, packed and sealed - 0:52 Vats cooking milk - 1:34 Extraordinary history of M-C Dairy (MаслоCоюз) - 1:40 Difficult life in Halychyna for Ukrainians (e.g., poverty, hunger, despair) in the late 19th century, early 20th century. People emigrated to countries like Canada because they constantly worked but could not feed their families. Bias and pressure placed on Ukrainians (by Austro-Hungarian rulers). Students joined to found a cooperative movement. Dairy producers created "маслосоюз" (Maslosoyuz or "butter co-operative"). At first it was small, but grew. Farmers brought their milk to Maslosoyuz to make finished dairy products - 2:43 Affiliates bloomed across Galicia, Ukraine (Austro-Hungarian Empire). In time, Maslosoyuz began exporting their products and became one of the largest dairy producers in Europe. - 3:01 In 1931 Maslosoyuz exported over 800,000 kg of butter to Western Europe alone. So one can imagine the scale that was involved to accomplish this. - 3:35 Maslosoyuz funded Ukrainian community entities including theatres, schools, libraries, Ukrainian language schools in villages and small cities - 3:51 Pacification of Ukrainians in Eastern Galicia (Пацифікація у Східній Галичині, Пацифікація у Галичині 1930) in September–November 1930. Maslosoyuz offices and affiliates were bombed and destroyed. Markets closed in Europe, Hitler came and World War Two began. The history of Maslosoyuz in Ukraine came to an end with the Red Army and World War Two - 4:35 After the War, Maslosoyuz directors moved to the west, first to Munich, Germany. Andrew Palij, Wasyl Trachuk, Ihor Ivanochko moved to Toronto, Canada and began a new Maslosoyuz dairy plant in 1955 - 4:55 Unfortunately diary products that where popular in Galicia, Ukraine failed to crack the English / Anglo-Saxon market, e.g., creamed cottage cheese, sheep's cheese, bryndza. Milk had to be acquired from other farmers, no access to fresh milk, no Ukrainian dairy farmers in the Toronto area. - 6:00 In 1983 Future Bakery began to make syrnyky (сирники). The best sour cream in Toronto was made by MC Dairy. Production was limited but the quality of their products was phenomenal. Other dairy products on the market did not compare to MC Dairy. In 1991 MC Dairy was purchased by Future Bakery and a new factory was built. - 7:09 MC Dairy follows three principles: 1. All products must be natural 2. All products are made with traditional methods. No products are made using automated machines. Manufacturing is not rushed or hurried. 3. All products must be of the highest quality. MC Dairy processes 10 million litres of milk per year. Remarks were prepared for the international conference "Cooperatives - past, present and future. Development and spirit in the community", Lviv National University of Veterinary Medicine and Biotechnologies, Lviv, Ukraine, 4-5 April 2016. Food & Beverage playlist: https://www.youtube.com/playlist?list=PL12ED9F0F94A97DA0 more at http://food.quickfound.net/ "A Film Lesson in Health and Hygiene." Why you should drink milk, and eat cheese & butter, combined with other foods. Originally a public domain film from the Library of Congress Prelinger Archives, slightly cropped to remove uneven edges, with the aspect ratio corrected, and one-pass brightness-contrast-color correction & mild video noise reduction applied. http://en.wikipedia.org/wiki/Dairy_product Wikipedia license: http://creativecommons.org/licenses/by-sa/3.0/ Dairy products are generally defined as food produced from the milk of mammals (the Food Standards Agency of the United Kingdom defines dairy as "foodstuffs made from mammalian milk"). They are usually high energy-yielding food products. A production plant for the processing of milk is called a dairy or a dairy factory. Apart from breastfed infants, the human consumption of dairy products is sourced primarily from the milk of cows, yet goats, sheep, yaks, camels, and other mammals are other sources of dairy products consumed by humans. Dairy products are commonly found in European, Middle Eastern and Indian cuisine, whereas aside from Mongolian cuisine they are little-known in traditional East Asian cuisine... Types of dairy products - Milk after optional homogenization, pasteurization, in several grades after standardization of the fat level, and possible addition of bacteria Streptococcus lactis and Leuconostoc citrovorum - Crème fraîche, slightly fermented cream - Clotted cream, thick, spoonable cream made by heating - Smetana, Central and Eastern European variety of sour cream - Cultured milk resembling buttermilk, but uses different yeast and bacterial cultures - Kefir, fermented milk drink from the Northern Caucasus - Kumis/Airag, slightly fermented mares' milk popular in Central Asia - Powdered milk (or milk powder), produced by removing the water from (usually skim) milk - Whole milk products - Buttermilk products - Skim milk - Whey products - Ice cream... Concerns Health Dairy products can cause health issues for individuals who have lactose intolerance or a milk allergy. Some dairy products such as blue cheese may become contaminated with the fungus Aspergillus fumigatus during ripening, which can trigger asthma and other respiratory problems in susceptible individuals. Dairy products if consumed after the expiry date can cause serious heart problems. Vegan advocates, such as John A. McDougall, Caldwell Esselstyn, Neal D. Barnard, Dean Ornish, Michael Greger, and T. Colin Campbell, have argued that high animal fat and protein diets, such as the standard American diet, are detrimental to health, and that a low-fat vegan diet may both prevent and reverse degenerative diseases such as coronary artery disease and diabetes. Avoidance of Dairy Products Some groups avoid dairy products for non-health related reasons: - Religious - Some religions restrict or do not allow for the consumption of dairy products. For example, some scholars of Jainism advocate not consuming any dairy products because dairy is perceived to involve violence against cows. Strict Judism requires that meat and dairy products are not served at the same meal, served or cooked in the same utensils, or stored together as prescribed in Deuteronomy 14:21. - Ethical - Veganism is the avoidance of all animal products, including dairy products, most often due to the ethics regarding how dairy products are produced. The ethical reasons for avoiding dairy include how dairy is produced, how the animals are handled, and the environmental effect of dairy production...
