Subscribe to the podcast at http://stemtalk.us Full show notes are available at http://stemtalk.us/episode-37/ The front pages of Gary Taubes’ new book on sugar feature a blurb excerpted from the magazine Scientific American: “Taubes is a science journalist’s science journalist who researches topics to the point of obsession – actually, well beyond that point – and never dumbs things down for readers.” Gary’s most recent obsession is documented in “The Case Against Sugar,” a book that argues that increased consumption of sugar over the past 30 to 40 years has led to a diabetes epidemic not only in the United States, but an epidemic that’s now spreading around the world. Episode 37 of STEM-Talk features a more than two-hour conversation with Gary about his latest research as well as a look back at other nutrition and science topics that have dominated Gary’s journalistic investigations since the 1980s. Gary first burst onto the national scene in 2002 with an article in the New York Times Magazine titled, “What If’s It’s All Been a Big Fat Lie?” Gary made the point that Robert Atkins and his high-fat, low-carb diet had a better history and scientific record of helping people lose weight than the low-fat diet that was and remains the centerpiece of the nation’s health policy and food pyramid. The article had an immediate impact. As Michael Pollan pointed out in the introduction of “The Omnivore’s Dilemma,” in the fall of 2002 bread “abruptly disappeared overnight from the American dinner table.” Virtually overnight, wrote Pollan, Americans changed the way they eat. Gary did not set out to become a science journalist. He graduated from Harvard College in 1977 with an S.B. degree in applied physics and went on to earn an M.S. degree in aeronautical engineering from Stanford University. But while at Stanford, he realized he wasn’t that passionate about becoming an aeronautical engineer and decided to enroll in the Columbia School of Journalism to become an investigative reporter. In the ‘80s, Gary became fascinated with flawed science and started writing a series of magazine articles about bad science. That eventually led to a pair of books: “Nobel Dreams” in 1987 and “Bad Science: The Short Life and Weird Times of Cold Fusion” in 1993. After “Bad Science,” Gary turned to nutrition reporting and that resulted in the 2002 article in the New York Times Magazine. He followed up on his research for the article with two books: “Good Calories, Bad Calories” in 2007; and “Why We Get Fat” in 2010. Both books detailed how refined carbohydrates are largely responsible for America’s rising obesity rate and a primary cause of heart disease, diabetes, cancer, and other chronic diseases of the Western diet. His new book, “The Case Against Sugar,” takes this argument a step further and shows how the explosion of sugar consumption and sugar-rich products in the United States has led to a global diabetes epidemic. Dan Barber, author of “The Third Plate,” wrote in a New York Times review of Gary’s book, “Comparing the dangers of inhaling cigarettes with chowing down on candy bars may sound like a false equivalence, but Gary Taubes’s “The Case Against Sugar” will persuade you otherwise. And by that time, the juice has lost all its flavor, which is why manufacturers have to add artificial flavoring to make it taste fruity again. In most cases, cereals are loaded with refined carbohydrates and sugar. Even if the label assures you that it's fat-free and whole grain, check the list of ingredients. It's not as simple as just getting your proteins and fats in. Honestly, if you really want to take care of your body you have to take it one step further and know where your protein sources are coming from, but also, what they're doing inside your body that you may not even be aware of. I'm going to lay out the three proteins that I think that you should focus on, and I'm going to lay out the three proteins that I think you should absolutely avoid at all costs, or at least try to reduce your consumption of. First off, salmon. It's kind of an obvious one, you would've expected Thomas DeLauer to be talking about salmon because it's higher fat, and it just makes sense on a ketogenic diet. But, I want to take it a little bit further than just traditional salmon. First off, let me explain why you want to make sure you're getting wild caught and not farmed. This is a story that you've probably heard before, but a lot of it has to do with what are called PCBs. PCBs stands for polychlorinated biphenyls, and what these PCBs do is they cause a lot of chaos with your autoimmune system in your body. What that means is that whenever you consume these PCBs it's tricking your immune system to actually start this cascade of different white blood cells and different immune responses that cause your body to fatigue. You may not feel it right at the front end, but you're going to feel it when it comes down to burning fat, having more energy, things like that, because your body is wasting resources on triggering up the immune system, than the resources it should be using to help you burn some fat, get in better shape, and feel great. What we're finding, particularly in a study that was published in the Journal of Science, is that salmon samples that were wild caught ended up not having too much in the way of PCBs. Still a little bit, because they were able to be consumed through whatever that fish was eating, and through the ocean, et cetera, et cetera. Fasting Tips: 3 Best Foods to Break a Fast- Thomas DeLauer… Fasting for Health Purposes - Bone Broth Bone Broth Contains: Collagen: the main structural protein found within the human body that helps form connective tissue and “seals” the protective lining of the gastrointestinal tract. It’s also the gel-like, smooth structure that covers and holds our bones together, allowing us to glide and move freely. As a rich source of gelatin (breakdown of collagen), bone broth protects and seals the mucosal lining of the GI tract, which means it improves nutrient absorption. Proline: Helps the body break down proteins and helps improve skin elasticity and smoothness. It is often recommended for its benefits to the heart, including keeping arteries from stiffening. Glycine: Necessary for DNA and RNA synthesis and digestive health. It is used for the production of glutathione, for blood sugar regulation and digestion Glutamine: Glutamine has protective effects on intestinal mucosa by decreasing bacteremia and epithelial cell apoptosis, enhancing gut barrier function, and influencing gut immune response - glutamine can fight against bad gut flora by protecting against mucosal breakdown in the gut. Arginine: Beneficial for lowering inflammation and improving the health of the blood vessels and cardiovascular system - improves blood flow in people with clogged arteries Positively affects both central nervous system and immune system functions since in the brain NO (arginine converted to NO) acts as a neurotransmitter and protective agent against outside threats (4) Kettle and Fire Bone Broth also contains ACV. ACV has high concentrations of acetic acid. Like other acids, acetic acid can increase your body’s absorption of important minerals from the foods you eat. Also reduces glycemic and insulin responses to foods such as a starchy meal by delaying gastric emptying (5) Fasting for fat loss - MCT Oil: Most fatty acids depend upon bile salt emulsification in order to be metabolized and absorbed. Fatty acids produce energy in the mitochondria but are dependent upon the L-carnitine compound in order for entry. MCTs provide immediate energy because they are able to cross the double mitochondrial membrane very rapidly and do not require the presence of carnitine. Instead of being packaged into lipoproteins that circulate in the bloodstream, they are absorbed directly into the bloodstream through the portal vein, and are then transported to the liver (6) This is basically allowing your body to prime itself upon breaking a fast. MCT Study: One study found that consuming MCT oils helped reduce body fat and triglycerides more than omega 6 vegetable oils. After eight weeks, the experiment showed the MCT oil group lost more weight, body fat, and subcutaneous fat, all while experiencing a 15 percent drop in triglycerides (7) Breaking a fast for muscle building while staying lean (higher glycemic carbs) Using the GI of carbs is a technique most commonly used to regulate blood glucose and insulin concentrations to optimize athletic performance/physique building. You should break your fast with high GI carbs but avoid combining these with fatty foods - fat slows down transit through the stomach, so eating fat post fast may slow the digestion and absorption of carbs. He trains hard, he works hard, but more than anything, Jay Cutler eats. A lot. "Cooking and eating is five to six hours of my day, no question," Jay says. "If you follow me around for a day or two, you'll see that most of my time is spent eating meals." Food is Jay's biggest expense, his biggest time-sink—and one of the main reasons he's been so monumentally successful. Eating so much so often is Jay's biggest challenge. "The hardest part about being the competitive bodybuilder Jay Cutler is the amount of calories I need to eat," he says. Most bodybuilders love to eat; they crave food. Not Jay: "I have zero cravings and zero anticipation for any meal. I don't look forward to food." Jay may not love it, but he still has to eat every three hours. He eats at midnight, again at three a.m., and then he eats his breakfast at six a.m. "The consumption of food remains consistent, and I still can't eat enough," Jay says. When he's training for a contest, Jay likes to stay home to prepare his food, leaving nothing to chance. "I like to weigh everything," he says. "[Precontest], I take my diet very seriously." Nonetheless, Jay's immense caloric expenditure means he eats food that most clean eaters would avoid. "Having a turkey sandwich and some potato chips is great for me," he says. "I'll have a Snickers bar every once in a while." To keep his size, Jay also needs a pretty consistent fuel of insulin-stoking simple carbohydrates. "Dense, fibrous carbs don't hit my body hard enough." He may not like having to eat as much or as often as he does, but Jay has the experience and willpower to do it well. Guys, I’m going to say it loud and proud: I love a plant-based diet. I’ve been vegan for years, and at 53, I’ve never felt better!! I encourage everyone to try a diet that’s more rich in plants and whole foods, so here are my 7 tips for trying a whole-foods, vegan diet. 1 Really consider the “whole” as in whole foods plant-based (example: think of an olive, versus olive oil) 2 Don’t try to do this all at once - It’s a marathon, not a sprint! 3 Don’t stress the protein 4 Think about what you CAN eat, instead of what you can’t 5 Gravitate towards “feel good food” 6 When in doubt, go for the foods that fight diseases 7 Always take a B12 Vitamin when you’re on a plant-based diet Evidence-based science to read (if you can be bothered)!
